Our paleo ancestors may not have known how to extract the vital oils from vegetables, but that doesn’t mean that people following the diet plan can’t use extracted forms of these oils. Many healthy vegetable oils are used in cooking these days, including coconut oil, avocado oil, and extra virgin olive oil.
All of these oils provide hefty amounts of essential fatty acids and can be vital components of a healthy diet. If you’re using an oil for cooking, it’s a good idea to use something with a higher smoke point, like canola oil.
