Leafy green vegetables and vitamin K go hand-in-hand. Swiss chard comes in a variety of colors and can be eaten cooked or raw. One thing to note is that Swiss chard is naturally high in sodium and should not be prepared with added salt. 100 grams of raw Swiss chard provides 830 mcg of vitamin K.
The alpha-lipoic acid, an antioxidant, found in Swiss chard is associated with better diabetes management. Alpha-lipoic acid has been shown to lower blood glucose levels and increase insulin sensitivity in diabetic patients. Other complications of diabetes such as retinopathy and peripheral neuropathy can also be improved with reduced symptoms.
